
Ok.. so this is one of those sneaky brekkies that I wouldn't have every day but is nice to slip in on a weekend... it's not nasty evil like bacon and eggs fried in butter or hashbrowns (see what I did there... subtly told you two breakfasts you need to stay right away from?) but it's essentially a pizza on a biscuit crust so it's a little bit evil... and whole lot gooood.
As with any individual pizza you can make the toppings to suit each person.. I made 4 pizzas and let the kids decorate their own... you could even do this as a pizza bar and have a base for each person so they just go through and dress their own pizza as they desire.
The bases would keep alright in an airtight container if you wanted to make them the night before and then do the toppings in the morning, but all up it didn't take too much prep time, easy job for a weekend morning.
(makes 4 pizzas)
1 1/4 cups whole wheat flour
1 teaspoon baking powder
3 tablespoons brown sugar
1/4 teaspoon salt
1/4 teaspoon cinnamon
1/3 cup milk
2 tablespoons olive oil
1/2 cup Philidelphia Extra Light cream cheese, whipped up with a fork or spoon to soften
½-1 tablespoon brown sugar
assorted fruit: blueberries, raspberries, strawberries, kiwi, bananas, etc.
Preheat oven to 180 degrees C
Chop up fruit that you want to use. The more colourful the better!
In a bowl, mix flour, baking powder, first lot of brown sugar, salt, cinnamon and stir. Make a well in the middle and add olive oil and milk, mixing with a spoon until a ball forms.
Now rings off and in there with your hands to bring it all together, shape it in to a ball.
Separate it into 4 equal sections (I actually used a kitchen scale and portioned it into 75 gram balls of dough).
Flatten it out with your hands or rolling pin to about 10cm diameter.
Place on a baking sheet and bake for 10 minutes, remove from oven and let cool completely.
While crusts are cooling, mix cream cheese and second lot of brown sugar until combined and creamy. Once crusts have cooled completely, spread each with a few tablespoons of cream cheese and top with fruit.

Be careful.... It's very, very tricky to eat this slowly... I'd hate to have any choking on my hands!
