
So, I'm well aware that I've been a bad bad breakfast poster... never a bad breakfast eater but sometimes it's not always easy to take photos and write up and post my breakfasts! This past week has been one of "those" weeks. I'm married to a designer and designers have weird schedules and sleeping habits and so the whole house has been in upheaval...
Anyhow.... My 3 year old had his first sleep over with a friend staying on Friday night so in the morning I decided to make pancakes with a bit of a twist for the kids. The kids loved these (well, my kids did, Zeke's friend isn't much of a breakfast eater... we'll convert him)
So simple too. When I di them again I think I will just use my normal crepe recipe, I did these ones with my mum's hotcake recipe thinking it would be better to have something thicker but it lost the effect I hoped for of being able to see the apple slice holes... also crepe recipe would make them a bit healthier.
That's the beauty of trying new things though, you get to decide how you can make it better next time ;)

To serve Dave and three kids I made up a batch of hotcake/pancake/crepe mixture (I wont post the recipe for this as it's hardly health food and, as I said, I would do it with crepe batter next time) preferably whole wheat and 2 apples.

Peel and core the apples.
Eat the peel (crucial step) ;)
Preheat a frypan and spray with a bit of oil spray.

Slice the cored apple in to slices about a centimeter thick.

Dip these into the batter. You can through them all in and just fish them out when you have space in the pan for them.

Place as many as will fit in the fry pan and cook each side till the batter starts to brown.
Voila!

You could serve these with toppings if ya like but my family ate them happily on their own, kinds like fritters.
